Warm Green Potato Salad (with ‘vegan mayonnaise’)

You might think I’ve got an obsession with all things vegan at the minute, not all true, I just have a few vegan friends that feel little hard done by in the recipe stakes and for whatever reason I’d like to be able to cater to everyone no matter what your eating style because its your stomach and you can put in it what you want (although a healthy balance helps). We’re all up for trying new things too, why not. 🙂

For your warm potato salad (serving 2 people) you will need:

  • 1 large potato diced into potato salad sized chunks
  • 1/2 small red onion finely diced
  • 1 tablespoon of fresh chopped dill
  • 1 tablespoon of fresh chopped parsley
  • salt and pepper to taste

Boil the potato with skin on for around 15mins or until tender enough to eat but with enough bite so it doesnt fall apart.

Add all ingredients into the pot once drained and add the ‘vegan mayonnaise’ below:

Now onto the ‘vegan mayonnaise’ its an interesting concept. I wanted potato salad, I wanted to push myself and not have mayonnaise in it and what else is lush and buttery but vegan friendly, avocado, boom, the mayonnaise subsititute was born.

You will need:

  • 1/2 an avocado
  • 2 tbsp olive oil
  • 1 tbsp cold water
  • 1 tsp mustard
  • squeeze of lemon juice
  • salt and pepper to taste

Whizz all the ingredients in a food processer until they’re the same consistency as normal mayonaisse.

Remember this is just the ‘mayonaisse’ part of the potato salad, simply giving it a little sauce, there will be other ingredients that go in the actual salad (above) to give it more depth of flavour.
