This adaptation of the Chocolate Pavlova is perfect for warm summer’s night, get the BBQ happening and crack open the wines!
1 Chocolate Pavlova
1 punnet each of strawberries and raspberries, rinsed. Strawberries quartered
2 kiwi fruit,peeled, halved and thinly slices
dozen mint leaves
1/3 cup limoncello
400ml double cream, lightly whipped
Putting it all together:
1. Place all the fruit (except the passionfruit) and half the mint leaves, sliced into small strips, into a large bowl and top with the limoncello. Leave this out on the bench to soak at room temperature while you whip the cream.
2. Dollop the cream atop the Pavlova 🙂 very satisfying step. Then rinse and clean everything you used, even wipe the bench or sweep the floor if you like, basically bide yourself as much time before you have done everything else domestic….then put the limoncello soaked fruit atop the cream. Finish by garnishing with the remaining mint leaves and scattering the passionfruit pulp.
